Artichoke hearts with rice recipe


Artichoke
is low in calories and fat; nonetheless, it is a rich source of dietary fiber. It provides 5.4 g per 100 g, about 14% of RDA fiber. Dietary-fiber helps control constipation conditions, decrease bad or “LDL” cholesterol levels by binding to it in the intestines and help prevent colon cancer risks by preventing toxic compounds in the food from absorption. Ingredients needed to make this Recipe. (4 servings)

  • 400 g sliced Artichoke
  • 200 g sliced Meet/Chicken
  • 200 g sliced carrot (or baby carrot)
  • 2 tablespoon vegetable oil
  • 1 medium size onion
  • 1 tablespoon salt
  • 1 tablespoon flour
  • 1 lemon
  • 3~4 cups of water

Preparation phase (10 min)

  • cut the onion to medium size cubes
  • cut the meat/chicken to cubes
  • squeeze the juice from the lemon

Steps (30 ~ 40 min)

  • heat the oil in a pane and put in the onions for about 1~2 min
  • add the meet/chicken, and keep stirring every 5 min
  • as soon as the meet/chicken are medium cooked add 3 cups of water
  • add the carrots and half the lemon juice and the salt
  • wait for about 10 min and add the Artichoke
  • keep stirring every 5 min for the next 20~30 min (till the Artichoke and carrot feels tender)
  • mix the remaining half of the lemon juice with the flour and pour them the pane for about 5 min, the mix should become a bit viscous

Artichoke can be served with rice on the side
