Fruit Salad

This fruit salad is tasty and refreshing! Especially great in the summer, but because these fruits are available year round you can enjoy this tasty dish any time.

Ingredients

For the fruit salad

  • 2 small or medium apples
  • 1 large banana
  • 1/4 pound seedless grapes
  • 1 can pineapple chunks, juice reserved, 20 ounces
  • 2 tablespoons shredded coconut

For the dressing

  • 1/4 cup reserved pineapple juice
  • 2 tablespoons honey, warmed
  • Dash of ground cinnamon

Instructions

  1. Drain pineapple, reserving the juice. Remove core from apples and chop into bite sized pieces. Slice banana. Mix the apples, banana, grapes, pineapples, and coconut in a medium bowl.
  2. Add the honey to a small bowl and microwave for 10-15 seconds or until warm. Add the pineapple juice and dash of cinnamon and mix well. Pour over the fruit and stir gently to coat. Refrigerate until ready to serve.

 

Recipe notes: The bananas don’t hold up well in the refrigerator for more than just a few hours, so if you plan on leaving it in the refrigerator for a while or plan on having leftovers, I would add the banana to the amount you plan on serving and then add it to the leftovers when you serve it.

Also, if I were serving this to small children I would cut the grapes in half because they are more likely to choke on a round object such as grapes.

Whole-Wheat Spaghetti with Avocado Sauce

 

Super creamy and delicious!

Ingredients:

For Pasta:

12 ounces whole-wheat spaghetti

1 cup of cherry tomatoes, halved

½ tsp olive oil

Sea salt, to taste

For Avocado Sauce:

1 avocado, halved, seeded and peeled

Juice of ½ lemons

1 tbsp extra virgin olive oil

½ cup fresh basil leaves

2 cloves garlic

Sea salt and black pepper, to taste

Instructions:

1 – Cook the spaghetti in plenty of salted water with olive oil, drain and set aside.

2 – Combine all ingredients of the avocado sauce in a blender, blend until creamy, season to taste.

3 – In a large bowl, combine spaghetti, avocado sauce and cherry tomatoes.

4 – Serve and enjoy!

An amazing fish stew recipe. One of the traditional dishes of the of my country that the popularity it has not believe how it can be so simple to prepare.

Fish Stew 

 

Ingredients:

4 pieces of fish (of your choice)
1 teaspoon of paprika
Juice of 1 lemon
2 dl of white wine
Salt and pepper to taste
1 onion
3 cloves of garlic
4 ripe tomatoes
0.5 dl of olive oil
1 bay leaf
1 bunch of parsley

 

Preparation
Arrange the slices of fish and season it with paprika, lemon juice, white wine, salt, and pepper. Let it marinate for 20 minutes.
Peel and wash the onions and the garlic cloves, cut the onion into thin slices and chop the garlic. Wash tomatoes and cut them into thin slices. Throw in a saucepan, the  onion, garlic, tomatoes, bay leaf and parsley. then arrange the slices of fish drained over.
Drizzle with marinade sauce and olive oil, cover and cook over low heat for about 35 minutes, adding a little water if necessary. Taste the salt, and remove from heat and serve sprinkled with chopped parsley.
